Spinach
Spinach is a vegetable suitable for diabetics, as it is very low in carbohydrates, as each cup of its raw leaves contains only about one gram. It is rich in fibre, magnesium and potassium, which are three nutrients that play an important role in controlling blood sugar levels. Spinach also contains alpha-lipoic acid, which plays an important role in regulating blood sugar levels.
Broccoli
Broccoli is one of the preferred vegetables for managing diabetes, as it is rich in fiber and antioxidants, and contains a compound called sulforaphane, which is linked to reducing inflammation and improving blood sugar control in patients with type 2 diabetes. Just one cup of cooked broccoli provides more than 5 grams of fiber and an abundance of vitamins C and K. Broccoli and sulforaphane have the ability to reduce high blood sugar, hyperlipidemia, insulin resistance, and oxidative stress resulting from diabetes.
