I inherited it from my father, and Aboya was inherited from my grandfather .. With these words, the uncle of the master of his speech, while he poured the dough into the copper repression, moves his hand with the experience of the years, until the threads of the kunafa fell on the hot tin, in a scene that does not differ much from an artistic painting drawn with high craftsmanship.
Ramadan .. the season of goodness and blessing
Sayyid’s uncle’s day begins in Ramadan before the back of the back, as he prepares his tools and begins to make the Konafa, to be ready hours before breakfast – Ramadan is our great season, working in it daily, people come to take the kunafa to heat to bring them the sweetest sweets, he says it smiling and he receives the requests of his customers coming from everywhere.
As for the rest of the year, it works only on Monday and Thursday, as it depends on its permanent customers, who cannot dispense with the original municipal kunafa taste.
A profession that challenges time
Despite the great development and the emergence of the automatic kunafa, the uncle of Sayyid sees that the municipal kunafa has a special taste, saying: The one who has the municipal kunafa is the age of what it forgets its taste, we do it with our hands and put our love and fatigue in it.
While he continues his work tirelessly, Sayyid’s uncle dreams that the profession will continue with his children, as he received it from his father, so that this beautiful heritage remains a witness to a long history of creativity and patience, and to keep the municipal kunafa a symbol of the Holy Month and a memory that is not absent from the tables of the Egyptians.
